Zucchini Casserole

I only eat a few vegetables, so remembering to eat even 1 vegetable per day can sometimes be a challenge.  Zucchini is one of the few veggies I can stand so I try to find new recipes including so zucchini so I am not just always eating it sauteed.  I found a great recipe on Food.com that my whole family loved!

1 cup Bisquick
1/2 cup chopped onion
1/2 cup grated cheese
1/2 teaspoon salt
1/2 cup vegetable oil
4 eggs
3 cups thinly sliced zucchini

This recipe is really simple.

1. Mix all of the ingredients together in a bowl.

It was so easy to cut the zucchini using our mandolin!

Onions were cut with the mandolin and the little Tupperware hand chopper

Everything unmixed in the bowl.

2. Pour into greased 9x13 pan (we used a round pan instead)

That's what it should look like before you cook it.

3. Bake at 350 for 30 minutes.

This is what it should look like fresh out of the oven....yum

If you like bisquick, zucchini and cheese, this recipe is definitely for you.  We will definitely be making this again :)

That looks delicious! Yellow squash & zucchini are actually vegetables I grew up eating a lot and my kids all love it too.
