Babysitting
Yesterday they came over and the older boy (he is 8) played Guitar Hero. It was so cute! He could only play on the beginner level where you only strum, but he loved it. And he knew some of the songs. He and his 5 year old sister got really excited about "One Way or Another" by Blondie. They both started singing it before he even played it.

All about Black Friday
This year it was my dad's turn to accompany me. He got a break since I didn't want to go to any of the stores that opened at 4 or 5 am. So at a little before 6 am, we departed for Target. Target had Guitar Hero World Tour with a guitar for the Wii for only 59.00. We got there right before they opened and didn't want to attempt to find the end of the line, so we waited with the small crowd who also didn't want to wait in the big line. Well, a lovely woman in the big line got very angry that we weren't in a line (but by no means were any of us trying to cut) so the employee made us form a new (secondary) line. By the time we got in, I swear hundreds of people had gone in before us. I was convinced they would be out. As we walked over to the electronics department (they had maps of the store printed), I heard a lady say something about "wii" and "out of stock" so I was even more convinced they were out. When we got to the department it was a crazy mob scene. The shelf was empty of Guitar Hero. I turned the corner down (where there was room) and saw employees handing out Guitar Heros from the back room. Success! I shoved my dad up to the front of that and he got one. Woohoo!!!!!!!
I also bought some rings from Claire's, books and movies from various stores, and half-priced jeans at Old Navy. By the time we got home around noon I was super tired!
But then I went and got a haircut (she cut 6 inches and no one can tell). Later we went for Chinese buffet but it wasn't anything magnificent.
Wow..what a day!!!

Broccoli Fish Bake
Ingredients:

1 pkg. (about 10 oz.) frozen broccoli spears, cooked and drained OR 1 lb. fresh broccoli, cut into spears, cooked and drained |
1 lb. fresh or thawed frozen firm white fish fillet (cod, haddock or halibut) |
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Broccoli Soup (Regular or 98% Fat Free) |
1/3 cup milk |
1/4 cup shredded Cheddar cheese |
2 tbsp. dry bread crumbs |
1 tsp. butter, melted |
1/8 tsp. paprika |
Directions:
ARRANGE broccoli in 2-qt. shallow baking dish. Top with fish. Mix soup and milk and pour over fish. Sprinkle with cheese.
MIX bread crumbs, butter and paprika and sprinkle on top. Bake at 450°F. for 20 min. or until fish is done.
Serves 4.

Good things are coming...
An online friend whom I have never met or spoken to off the computer is supposed to be in town today. We are hopefully going out to lunch or dinner. I am so excited to finally meet him!!!

Fresco Restaurant
About 6 months ago they opened a new location much closer to my house. I was hesitant to go there but thrilled to discover I already knew the owner. I have to say...this location is just as good as the other one! The food is almost exactly the same and the employees are really friendly.
It's so nice when multiple locations of the same restaurant are all great!

Artichoke Spinach Lasagna
1 | medium onion, chopped (1/2 cup) |

1 | can (14 oz) vegetable broth |
1 | tablespoon chopped fresh or 1 teaspoon dried rosemary leaves |
1 | can (14 oz) artichoke hearts, drained, coarsely chopped |
1 | box (9 oz) Green Giant® frozen chopped spinach, thawed, squeezed to drain |
1 | jar (15 to 17 oz) roasted garlic Parmesan or Alfredo pasta sauce |
9 | uncooked lasagna noodles |
3 | cups shredded mozzarella cheese (12 oz) |
1 | package (4 oz) crumbled herb-and-garlic feta cheese (1 cup) |
Rosemary sprigs, if desired | |
Lemon wedges, if desired |
1. | Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. |
2. | Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion and garlic; cook about 3 minutes, stirring occasionally, until onion is crisp-tender. Stir in broth and rosemary. Heat to boiling. Stir in artichokes and spinach; reduce heat. Cover; simmer 5 minutes. Stir in pasta sauce. |

Kate Voegele - Don't Look Away
Today is my day to do a product review...so I'm hoping talking about a CD counts. I was watching "One Tree Hill" this week and Kate Voegele (Mia) sang. I was reminded of how amazing her voice is. I went out and bought her CD the very next day. Every song she sings is as good as the next. I don't often spend money on CDs but I am really glad I bought this one!

Chicken Enchiladas
Creamy Chicken Enchiladas
3 cans cream of chicken soup
1 4-ounce can diced green Ortega chiles
1 cup sour cream
1 soup can of milk
diced cooked chicken
2 dozen tortillas
Monterey Jack or longhorn cheese, grated
Mix soup, chiles, sour cream, and milk together in a large skillet. Heat until it bubbles. Remove from heat and dip tortillas into mixtures one at a time. Place chicken onto tortillas and roll, then place into a baking dish sprayed with cooking spray. Cover with foil. Bake at 350° for 30 minutes. Remove from oven, sprinkle with grated cheese, and serve with additional sour cream and guacamole, if desired.

The Changeling
Wow, I am so glad we picked "The Changeling". It was an amazing movie. Yet again, Angelina Jolie was brilliant. I have never seen her not do a FANTASTIC job.
It was a little bit long but I didn't even notice until the movie was over and I checked the time.

Broccoli Cheese Soup
1 small onion, diced
1 - 10 ounce package of frozen chopped broccoli
2 cups of milk
1 1/2 cups water
1 cup shredded cheddar or monterey jack cheese
2 chicken bouillon cubes
3 tablespoons flour
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
In a large saucepan, cook the onion in butter until tender. Stir in flour, salt, and pepper until blended. Add milk. Cook until thickened, about 2 minutes, stirring constantly. Add cheese and stir until melted. Remove from heat. In medium saucepan, dissolve bouillon cubes in water. Bring to a boil, add broccoli, and cook till broccoli is tender. Do not drain. Add broccoli and the cooking liquid to the cheese mixture, and stir until blended.

Puppy Chow - for humans
A few years ago a friend brought a dessert called "puppy chow" to work. It is amazing and addicting!!!!! If you love chocolate and/or peanut butter, you HAVE to try this.
CHEX MIX PUPPY CHOW
9 cup Chex
1 cup chocolate chips
1/2 cup peanut butter
1/4 cup butter
1/4 teaspoon vanilla
1 1/2 cup powdered sugar
Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter. Remove from heat and stir in vanilla. Pour over Chex cereal, put into a large plastic bag with powdered sugar and shake well to coat. Spread mixture evenly on wax paper and allow to cool.

Falafel
I was just talking about falafel with a friend so I decided to post a recipe for it for today. I've never tried it so if you do try it, let me know how it is. Many comments said to add a bit more flour.
Prep Time: 15 minutes
Cook Time: 1 hours, 45 minutes
Ingredients:
- 1 cup dried chickpeas or 16 oz. can of chickpeas or garbanzo beans.
- 1 large onion, chopped
- 2 cloves of garlic, chopped
- 3 tablespoons of fresh parsley, chopped
- 1 teaspoon coriander
- 1 teaspoon cumin
- 2 tablespoons flour
- Salt
- Pepper
- Oil for frying
Preparation:
Place dried chickpeas in a bowl, covering with cold water. Allow to soak overnight. Omit this step if using canned beans.Drain chickpeas, and place in pan with fresh water, and bring to a boil.
Allow to boil for 5 minutes, then let simmer on low for about an hour.
Drain and allow to cool for 15 minutes.
Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour.
Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.
Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.
Fry in 2 inches of oil at 350 degrees until golden brown (5-7 minutes).
Serve hot.
Serving Suggestion
Falafel can be served as an appetizer with hummus and tahini, or as a main course. Stuff pita bread with falafel, lettuce, tomatoes, tahini, salt and pepper. As an alternative, falafel can be formed into patties and served like a burger.

I don't want any sympathy....
Wednesday morning we went to my grandparents' house in Los Angeles for Yom Kippur.
On Thursday, my aunt told us they were rushing out to California (from Denver) to try to see her father-in-law before he died. The father-in-law died on their drive out here.
My mom and I decided to go down for the funeral which was scheduled for Sunday. My grandparents live in Los Angeles so we headed down Saturday morning to spend some time with them.
Saturday afternoon, my grandpa was feeling so sick he went to the emergency clinic. They sent him to the ER. After about 6 hours in ER, he was admitted as a patient and given a room in the real hospital. Once he finally got a room, my grandma and I went home so I could get some sleep before the funeral the next morning.
Sunday morning around 4:30 am, I woke up with food poisoning. I tried to ignore it and went back to sleep for about an hour. But then I couldn't take it anymore. But...I still went to the funeral because I wanted to be there for my aunt and my family.
Now my grandpa may or may not be needing surgery so we may be going back down to LA tomorrow.

Saturday's Product Review - HP Laptops
About a year ago, my sister and I both bought brand new HP laptops. We have had nothing but trouble!
Her biggest problem was a faulty hard drive...she lost everything! The only good thing was that her replacement hard drive came quickly.
My biggest problem was a faulty battery, it wouldn't recharge. It took months for them to send a replacement, thankfully the replacement works. Smaller problems are the mouse click buttons peeling away and they keyboard keys peeling away.
We both have a big overheating problem also. I recently had to buy a cooling fan because it was shutting off every time I used it for more than an hour.
People go back and forth about which laptop is the best, will last the longest, etc. I have to say I don't think I will buy a HP laptop ever again.

The Merlin Menu - Blog and recipes
Chocolate:
1/2 cup butter
1 cup semisweet chocolate chips
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tsp espresso powder (my addition)
3/4 cup granulated sugar
3 eggs
2 teaspoons vanilla
Peanut Butter:
1 8-oz package cream cheese, softened
1/2 cup peanut butter
1/4 cup sugar
1 egg
1 tablespoon milk (I used cream)
1/4 teaspoon vanilla
Preheat oven to 350 degrees F. Grease an 8x8-inch pan.
To make the chocolate portion, melt the butter and chocolate together in the microwave for 30 seconds at a time. Melting chocolate in the microwave is the way to go but it's easy to burn it, so watch it carefully. Let cool slightly.
In a separate bowl, whisk together the flour, baking powder, and salt and espresso powder and set aside.
Whisk the sugar into chocolate mixture. Add the eggs, and whisk until the mixture is smooth. Stir in the vanilla. Add the flour mixture and stir until well incorporated. Pour into prepared pan.
For the peanut butter part, beat together all the ingredients until smooth and creamy. Now in the original recipe from Southern Grace she layered the peanut butter on top of the brownie layer and I decided to swirl it together instead. Although mine came out great, the peanut butter mixture is a bit thin, even after baking, so NEXT time I make these, I'm going to put part of the brownie mix in the dish, part of the peanut butter, swirl it around and then repeat the process on top of that first swirled layer. Just my preference after trying them simply swirled.
Bake for 40-45 minutes, or until a toothpick comes out clean. (I found they needed to be baked close to an hour for my preference for doneness) Cool completely before cutting. Cut in squares and serve. Enjoy, and thanks to Southern Grace for this great recipe.

Dogs and Skunks = BAD

Crescent roll churros
Just four ingredients in a speedy version of the crispy Mexican classic, cinnamon sugar-sprinkled churros.
Prep Time: 15 min
Start to Finish: 30 min
Makes: 12 churros
Ingredients
2 tablespoons sugar
1 teaspoon ground cinnamon
1 can (8 oz) Pillsbury refrigerated crescent dinner rolls
2 tablespoons butter or margarine, melted
Directions
Heat oven to 375F. In small bowl, mix sugar and cinnamon; set aside. Unroll dough; separate into 4 rectangles. Press each to 6x4-inch rectangle, pressing perforations to seal.
Brush tops of 2 rectangles with melted butter; sprinkle with about half of the sugar mixture. Top each with remaining rectangle; press edges lightly. Brush tops with melted butter.
With sharp knife or pizza cutter, cut each rectangle stack lengthwise into 6 strips. Twist each strip 3 times; place on ungreased cookie sheet.
Bake 9 to 11 minutes or until golden brown and crisp. Brush tops with any remaining melted butter; sprinkle with remaining sugar mixture.
High Altitude (3500-6500 ft):No change.

Campbell's Microwavable Soups
I love how easy they are to make. You don't have to add any water. You just pull out the metal thingie and microwave it.

Hash Brown Casserole
2 pound bag of frozen hash brown potatoes
2 tablespoons minced onion
1 can of cream of mushroom soup
1 pint sour cream
2 cups shredded cheese
1 stick of butter, melted
salt and pepper to taste
Mix all ingredients in a bowl. Pour into a 9x12 baking dish. Bake at 350° for 1 hour or until tender and golden brown.
Note: substitute cream of broccoli soup for the mushroom soup for a different flavor

Exercising
I have done three things to change things up:
1) I have switched my cardio from the elliptical to this machine that is a treadmill with two sides that both move separately. It burns more calories and it's nice to be on a new machine.
2) Instead of doing 3 sets on a machine and then going to the next machine, I am now doing what I think is called "circuit training". As soon as I am done on one machine I go to the next machine. I do 3 complete rotations of the machines.
3) I tried a step class on Saturday morning. It kicked my butt! It was really challenging (there were a few moves I couldn't get down) but also really fun.
Hopefully these new things will help me to get into even better shape!

Etsy shops
One of the shop owners is Ruthie. She has tons of necklaces, bracelets, earrings and more. I ordered a bracelet and 2 pairs of earrings from her. They arrived promptly and Ruthie was great to work with. I will definitely order from her in the future.
Angelica and Heather own the other shop. They sell jewelry, pouches, pins and more. I ordered 2 pairs of earrings from them. They arrived very quickly and were gorgeous. I will order from them again for sure.
