Eggs and toast variations

So....my mom saw my Menu Plan Monday on Monday and said "oh, great post".

Now tonight she said..."what's on the menu for tomorrow?"

When I said "eggs and toast"...well let's just say if looks could kill...I wouldn't be writing this right now.

So, does anyone have any advice on a way to spice up eggs and toast? Good omelet combinations, or something totally different?

My favorite two ways to serve eggs and toast:

#1: Take toasted bread and tear into bite size pieces, place in a bowl. Soft boil eggs, and scoop eggs on top of bread and mix together. (1 piece of bread per large egg) My dad used to make this for me and it was my all time favorite.

#2: Using a glass, cut a circle into the middle of a piece of bread. Place in a hot buttered pan, crack an egg into the circle. Heat until egg is cooked, and enjoy!

Haha we love breakfast for dinner.

French Toast with poached eggs is one of the girls faves.
They also like breakfast sandwiches which is scrambled egg (not all mooshed up still sticking together), then topped with ham and cheese on any type of toast or English Muffin, bagels or whatever. Serve with fruit and no one complains. It's even good without the ham (that's how I eat mine).
Breakfast burritos are great too if you have any tortillas.

we found a recipe in a Star Wars book. Cut a hole in your toast with a cookie cutter and put the toast in a pan then put the egg in the middle of the toast. It makes it more fun for kids to have the egg in their toast. I guess it's like a fried egg.

Yup...throw the eggs away. They like liver are one thing I cannot stand LOL. Need I say more LOL

I have recently found we all LOVE breakfast foods, but never have time to cook. So I'm adding a breakfast to my menu at least every other week.
